Bonsai Sushi Bar in the Hilton Pensacola Beach Hotel has the best sushi on Pensacola Beach … and probably the Gulf Coast.

“We’re one of the only sushi vendors in town to order fresh fish twice a week,” according to the Hilton’s Food & Beverage Director.
With four top-notch sushi chefs, Bonsai recently expanded its menu offerings and opened for lunch service, enjoying a great local following.
That might be because of the amazing view and the fact that Bonsai is a fun place to bring your kids and try new things. It could also be because the chefs have free reign to prepare special rolls and dishes not found on the expansive new menu.
The menu features a distinct focus on smaller dishes with a nod to presentation. Please your palate with the Kamikaze Tostadas (seared spicy tuna, avocado, spicy mayo and wasabi tobiko on fried tortillas) or the Pensacola Beach Roll (tuna, jalapeño and cilantro).
Then move on to a Florida Sunset (lump crab and cucumber with smoked salmon and avocado) as you take in the sight of the same. And remember – if you don’t see something you like, chances are, you can have it made especially for you.
Chef Do has built upon his experience in Vietnamese cuisine to explore roles (and rolls) in the kitchens of several area Japanese and Chinese restaurants. He says he loves to “try new things using the basic house ingredients, touching it up to what the customer wants.” That’s how he inspires his team in the kitchen.
